I know some of you are wondering how to pinch those pennies when there aren't many of them to pinch in the first place.
You need to keep Rice, Mac and Cheese, Ramen Noodles, Potatoes,dry Spaghetti and canned sauce, Grits and dry beans,flour and eggs as your staples.
If you can eat chicken, those bags of chicken leg quarters cooked in a big huge pot full of water will give you plenty of broth to cook with, but who can save that stuff unless they have freezer ziplocks and store them flat in a freezer to thaw and use to cook rice or make soup. We find that when I pick all the meat off the bones we eat the meat too fast, so we cut up the legs and thighs and freeze meal portions to cook or precook and freeze or even marinate raw and freeze.
Add what you can to them to pump them with some better nutrition when you can.
Ideas:
Grated raw Zucchini goes real good in spaghetti, egg salad,fried potatoes, mac and cheese,rice, ramen noodles or soups.
Peppers,celery,carrots and onions go in everything too, adding more veggies. One day I got nuts and made a potato salad like I'd tasted when we went to a Brazilian party here in Okeechobee. I cubed and cooked the potatoes with shredded carrots, drained and cooled them, then added shredded zucchini, minced onion,chopped cilantro, mayo, mustard,sugar,S&P. Not bad, only I use more sour cream than mayo these days.
Cucumbers can be fried, eaten raw or in soups.
Oatmeal...............yes it's good for us. I know, we're supposed to be eating more of it too. I have some on my shelf, REALLY
I'd like someone else to get into this discussion and help me come up with more VERY CHEAP food that has better nutrition than eating ramen noodles and cold cereal.
The cost at the store adds up faster than the words in this post. Every time we go to the store, I see some precious little mama or couple trying to pick out food to make the money last a little longer. Let's have some positive feedback from you all, and suggestions that really are helpful. Not everybody will eat veggies either, especially kids.
Don't forget, if you are hungry and in Okeechobee Florida, you can go to the Methodist church where you can get a free warm meal at noon each day, plus a friendly smile. One meal is better than no meal.
