Petra's Elderberry syrup Ingredients: 25 elderberry blossom (umbel) 3 liter water 2 kg sugar (1kg equals 2.2 pounds) 2 lemons (organic) 60g citric acid (powder) Collect your elderberry blossoms and lay them out on some newspaper and leave them for 1-2 hours to give bugs a chance to escape. Do not wash!!! Meanwhile bring the water with the sugar to a boil (about 5-10 min.). Remove from heat and cool. Remove the stalks from the elderberry blossoms. Wash lemon and cut them into slices Layer the blossoms, lemon slices and citric acid powder into a crock or something there like (I used the my crock pot pot). Add the cool sugar water and stir. Place the pot in a cool place (or in the fridge) for 6 days stirring ones a day. After six days filter the syrup into bottles. I like to add this to a glass of club soda (soda water). Enjoy! This is a historical drink here in Germany that was enjoyed during the hay harvest.
