Apple Ginger Jam (makes 6 8 oz glasses) 10 small cooking apples 1 cup water 2 tsp ground ginger 4 cups sugar Peel, core, and slice apples as for pie. Tie peel and seeds in cheesecloth. Combine apples and water in heavy kettle. Heat to boiling, simmer, stirring often until almost tender. Add cheesecloth bag and ginger. Simmer until apples form a smooth pulp. Remove apple bag. Add sugar and stir until sugar dissolves. Boil rapidly until jam sets, about 15 minutes. Seal in hot sterile jars. Good served with roast pork, pancakes and waffles.
