This looks interesting...
Ingredients:
2 cups prepared spaghetti squash 1 cup cheddar cheese, grated 4 whole eggs, beaten 2 oz heavy cream 2 TBS butter or olive oil 2 TBS chopped scallion 2 TBS chopped green pepper 1/2 cup sliced mushrooms 1/2 cup frozen brocolli florets 1/2 cup bacon crumbles, diced ham, sausage or any other meat you prefer Salt and pepper to taste
How To Prepare:
Begin by squeezing as much excess water as possible from the spaghetti squash.
In a 9x13 baking dish, melt the butter.
Add all your chopped veggies including spaghetti squash to a large skillet that has been sprayed with no stick spray and allow to cook out any excess liquid.
Drain well in a collander lined with paper toweling. Add this veggie mixture to the baking dish.
Add cheese to top of veggies.
Now beat together eggs and cream. Pour over the top and allow to sink down into veggie mixture.
Bake at 350 degrees just until set about 15 mins.
This recipe is easily adaptable to your family's preferences.
Add or delete your favorite veggies or meats. Number of Servings: 8 Carbs per serving - 36 total carbs 4 carbs per serving
