It's been so hot, all I can think about is ice cream lately. Please God, don't let my doctor read this!! ;D Anyway, someone sent me an email with what they called Two Ingredient Ice cream that does not need an ice cream freezer. Now who on earth thought this one up? I looked at the recipe and guess what, it's a little more than two ingredients, but that name did get my attention because it only takes 6 hours to make and no, it really doesn't need an ice cream freezer! Here's the recipe!! Two Ingredient Ice Cream Prep: 10 minutes Freeze: 6 hours Ingredients: 1/2 cup of honey 2 1/2 cups of whipping cream (35% fat) (I added vanilla to my recipe as well. It is not necessary). Whip 1.5 cups of whipping cream (plus 1 teaspoon of vanilla extract if desired) until it forms stiff peaks, refrigerate. 2. Heat honey on low heat until it is very runny and add the remaining 1 cup of cream. Stir together until well blended (and grate in teensie bit of vanilla bean, if desired). 3. Add honey/cream mixture to the whipped cream. Whisk until well blended. Freeze in covered bowl in freezer 6 hours. When you go to eat it, if there are ice crystals, just briefly nuke and you'll have a great ice cream. Try all kinds of flavors.
