I was looking at our freezer today, thinking how unloved it looks. There was a time when it was full of OAMC (Once A Month Cooking)dishes. Things like big ziplocks filled with stuffed bell peppers, loaded baked potatoes, meatballs, chimichangas, bean burritos, tamales, casseroles. What happened? I guess life happened, you know, things that get in the way. These days my husband buys tamales from a lady who delivers them to the worksite. Now THATS embarrassing Sometimes these things happen. Doesn't mean we're out of it forever. Just have to make a list and get busy. One or two days of intense cooking and baking can pretty much keep you in grub for a good while. Boiled ground beef can be used in many different recipes, and it saves you a lot of time. Did you know that a little flour mixed into a big bag of grated cheese will keep it from sticking together? Don't be afraid of taking on a project like this for the whole family one weekend. You can make lots of breakfast sandwiches, pancakes, french toast, even sandwiches and subs(minus the greens) and freeze them up. A couple of weeks ago, I made up some tuna sandwiches for work and froze them. Very nice to eat a really cold tuna sandwich on a hot day at work. Hope this gives you some kind of encouragement to work on filling your freezer with easy to eat foods. Have fun!
