1 white radish, medium size 1 teaspoon bay salt 1/2 tablespoon sugar 1/4 cup red pepper powder, divided use 2 cloves garlic, crushed 1 teaspoon ginger, finely crushed 1 tablespoon Saewoo-Jut, diced (salt-fermented small shrimps) 3 radish leaves 4 green onions 1/8 bundle of watercress
Cut washed radish into 1-inch cubes and sprinkle salt and sugar on the cubes. Mix gently and allow to sit a few hours in a bowl. Move radishes to a strainer and drain, reserving the juice. Mix drained radishes gently with a pinch of red pepper powder for color.
Add remaining red pepper powder, garlic, ginger and Saewoo-Jut to the reserved juice. Mix well to make seasoning paste.
Cut radish leaves and green onion into 1-inch pieces and mix with the radish, then mix everything well with the seasoning paste.
Cut and trim watercress into 1-inch pieces. Mix gently with radish mixture and store in a firmly sealed container in the refrigerator. Serve room temperature or cold as side dish or condiment.
