Basic Spice Rub for Chicken
Makes about 1/2 cup
2 Tbsp ground cumin
2 Tbsp curry powder
2 Tbsp chili powder
1 Tbsp ground allspice
1 Tbsp ground black pepper
1 tsp ground cinnamon
Combine all ingredients in small bowl.

Southwestern Seasoning Mix
1/4 cup chili powder
1/4 cup onion powder
2 Tbsp ground cumin
2 Tbsp ground coriander
2 Tbsp dried oregano
2 Tbsp dried basil
1 Tbsp dried thyme
1 Tbsp garlic powder
Combine all ingredients. Store in a an airtight container. Use as a
seasoning for cooked vegetables, grilled meats or chip dips.
Editor's Note: For use as a dip, combine 1 tablespoon mix with 1 cup
sour cream and salt to taste. Chill for 1 hour.
Yield: 1 cup

brand, so use a bit less. If you are a purist, never substitute this
for pure chile powder.

1 tablespoon dried mild or hot chile peppers
1 teaspoon cumin
1 teaspoon Mexican oregano
1/2 teaspoon cayenne
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground cloves
Mix all ingredients and grind to a fine powder using a mortar and
pestle, or process in a food processor or blender. This has a shelf
life of up to 6 months.

boned chicken breast halves. (Or freeze in a freezer bag up to 6
months. Thaw before grilling.) Grill, covered with grill lid, over
medium-high heat (350° to 400°) 6 to 7 minutes on each side or until done.
Yield: Makes 1/4 cup
