Yep, I'm at it again. It's about that time of year when it's nice and cool and all I want to do is MAKE SOMETHING!!! Today I made cortido and yogurt. Here's the recipe for Cortido I used from a good website. I grated one head of red cabbage, one head of green cabbage, four large peeled beets, one bag of carrots, 1 green bell pepper. There was supposed to be some dried oregano, but I forgot to add it. I added a little sea salt(I have to watch my salt intake), whey from yogurt, red pepper flakes, and celery seeds, not much. Mixed it all around in a clean plastic dish pan just for veggies, then stuffed the mixture of veggies in a large jar, mashing down with a thick piece of dowel rod that was cut, sanded and cleaned just for mashing veggies to be fermented. I rolled up large cabbage leaves to take up room between the top of the cabbage and the lid of the jar and put the lid on loosely. Same with the smaller quart jar. Now they will sit at room temperature for three days. LET IT SNOW, I'm a happy camper! Elaine/FL
